I have complained to food service about the insufficient calories served in the kosher/halal meals. I attempted to address the issue on numerous occasions. Initially, I wrote the chaplain about specific food items not being provided. In turn, the food service administrator retaliated and cut the portions of food. We only get between 1,500-1,600 calories daily, if that much. The 10 inmates on religious diets are literally starved. And they refuse to provide us with the daily menu so we know what will be served. We hear that the administration (food service) is misappropriating funds, with the manager taking food from the warehouse for her restaurant.
In addition, I’m told by kitchen workers that one of freezers doesn’t work. In the last three months, all the food served that is kosher is freezer-burned and the plastic trays are cracked, with the seal broken. (Food service orders the hallal/kosher food from a vendor. Companies sell pre-prepared, sealed food trays, But the food trays are now all freezer burned and the trays are often cracked with the seal broken at times, which leads us to believe food service is ordering damaged trays at a reduced cost.)
We also are not served the BOP national menu. When asked, a food service worker said the regional office allowed them to change the menu. Then, what’s the purpose of the national menu???
